Easy no-fuss recipes to enjoy with the family during lockdown




I made this one up while we have been on lockdown as we could not get fresh fruit to start with and had to use frozen.

I wanted to start trying smoothies and get lots of fruit in at the same time and this recipe could not be easier.

With this recipe, my wife and I spilt it over two tall glasses.

SIMPLY FRUIT SMOOTHIE

Serves 2

Ingredients:

100g frozen berries

50g frozen mango

½ fresh peeled banana

250ml apple juice

1 tbsp cinnamon

(You can add water or ice cubes if too thick for you)

Method:

Put all the ingredients in the blender/smoothie maker and blitz.

Chicken fajitas are always a family favourite in our house and the way we do our chicken for the fajitas is the best way we have found.

We have ours with lettuce, wraps, sweetcorn, mayo and salads, but that bit is entirely up to you.

CHICKEN FAJITAS

Serves 2

Ingredients:

Two chicken breasts

1 tbsp chilli powder

1 tsp cumin

1 tsp paprika

½ tsp cayenne pepper

½ tsp garlic powder

1 tsp salt

1tsp pepper

3 tbsp olive oil

Method:

Put all the spices and oil in a bowl and sit together.

Wrap the chicken breasts in tin foil and cook them in a preheated oven on gas mark 7 (220 degrees) for one hour.

Once cooked, take them out of the foil and transfer to a plate. Using two forks, shred the meat and then add it to the spice mix and thoroughly coat.

In a frying pan over a medium heat add the chicken and dry fry until the meat is crispy.

Serve with your accompaniments.
