Thetford burger business is on a roll




Two trained chefs are flipping the takeaway scene on its head in Thetford by making their burger ideas the taste of the town.

With items such as buttermilk chicken burgers and truffle and parmesan loaded fires, Boxed Burgers, in the Sports and Social Bar, Bury Road, run by Wayne Harvey and Luke Cornelius, has already seen its popularity grow so much since opening in January, that one night they ran out of burgers.

Wayne said: “I had the idea in my head for a while and we had the opportunity to take on the premises, just to test the water.

“Coming from Thetford, it gets a really bad rep but it is a lovely place and I wanted to show that a more upmarket thinking to takeaways could work here and we have been taken back by the feedback.”

The pair met through fellow chef, James Carn, when they all worked at The Angel Hotel in Bury St Edmunds.

Wayne, 30, trained at West Suffolk College and has worked in Australia and New Zealand as well as Cambridgeshire, Suffolk, Norfolk and Essex.

Luke was sous chef at the Bildeston Crown and has been a finalist in both Young Chef of the Year and Suffolk Chef of the Year for the last two years before joining forces with Wayne on this and their outside catering company- Country Box Catering.

Interesting menu choices include an Asian infusion burger – a soy patty, with coriander and wasabi mayo, tempura spring onions with pickled carrots and their Tex-Mex, which is a beef patty, pulled pork, hot sauce, nachos, spiced cheese, and jalapeños.

The burgers have appealed to Thetfordians so much, not only did they run out of burgers but also had to put a hold on orders another night just to keep up their high standards.

Wayne said: “We are still developing our recipes and ideas, trying to make Boxed Burgers as good as it can be.

“We are forever grateful for the feedback and I know it sounds corny but we feel blessed when people say how much they love our food.”

Their concept is also trying to be ethical with biodegradable packaging, selling drinks from British suppliers and getting their buns from Wooster’s Bakery in Bardwell, 20 minutes’ drive away.
