New head chef at The Angel Hotel in Bury St Edmunds, James Carn, has been working on creating the perfect team for his kitchen as he embarks his new role at the iconic hotel in the heart of Bury.

James, who was named Chef of the Year in the 2016 Suffolk Food and Drink Awards, worked as a junior chef at the hotel more than five years ago.

He returned last month and describes his food as simple world influence with a Suffolk core.

James enjoys relaxing with his three sons, making bread together, as well as foraging for some of the wild tastes growing in Suffolk.

He said: “I am working on getting the perfect team together in the kitchen. It’s so important to get the right balance of skills and experience because the key to any successful kitchen is to have consistency in the food. It’s a massive privilege to be working in my home town.”
