A much anticipated restaurant that will bring a taste of the outback to Mildenhall has been delayed in opening.
Cadillac Jack’s was due to open its doors on April 16 however remained closed.
Owner Punch Taverns has said it intends to open the bar and restaurant in May.
Corrine Yendle, who was due to be licensee of Cadillac Jack’s has withdrawn from the project.
A spokesperson for Punch Taverns said: “The launch of Cadillac Jack’s has been delayed until the agreement has been finalised by the new licensee.”
Despite the change of licensee Punch Taverns has said that the concept of the American-themed restaurant and bar will remain and will serve exotic meats including zebra, kangaroo, water buffalo and wildebeest.
An investment of £150,000 has seen the restaurant, formally the White Hart, in Mildenhall High Street redecorated throughout.
