Kangaroo, zebra and wilderbeest are among the exotic meats that will be jumping on to plates in Mildenhall later this month.
Cadillac Jack’s steakhouse will open in the former White Hart pub, in High Street, on April 16.
Owner Corrine Yendle said: “We are a family owned restaurant – it’s all home made on the premises.
“I think it’s going to bring a whole new dining experience to Mildenhall.
“So far the response has been outstanding.”
Cadillac Jack’s will be an American Australian restaurant offering customers the feel of the outback and a menu that incorporates both exotic options and traditional favourites.
Corrine already owns a steakhouse in Littleport, which she said had received a great response with American clientele, claiming they have not had steak like hers since leaving the States.
