Sergio hopes to be a s-mash hit
A Freckenham chef will be battling it out against five others to claim the title Pub/Restaurant of the Year when he competes in the final of the 2008 Great Potato Challenge.
Sergio Neale, new head chef at the Golden Boar Inn, has been selected as a national finalist in the competition run by the British Potato Council (BPC).
Sergio won approval during initial judging with his innovative dish of black pudding stuffed potato fondant, apple pure, chicory and quail egg salad with bacon dressing, which had to feature potato as the main component of the meal.
He will now have to prepare, cook and serve his dish to a panel of industry experts in a competitive cook-off on January 21, in London.
Sergio, 28, said: "I'm really happy, particularly to be in a competition which is all about supporting and sourcing British produce.
"I came up with the dish because I love black pudding and I love potato fondant, so I just put the two together and it seems to work. Hopefully, I'll be putting it on the menu early next year."
He added: "I'm not nervous about the competition at the moment but I'll be practising the dish a lot and making sure I spend plenty of time perfecting it."
The winner will receive 1,000 in holiday vouchers.
