Masterchef finalist to start work in Bury St Edmunds

Ryan Smith from Petrus win bar in Bury welcomes new chefs Oli Boon and Erin Summers.

Ryan Smith from Petrus win bar in Bury welcomes new chefs Oli Boon and Erin Summers.

MasterChef finalist Oli Boon is to bring his culinary skills to Bury St Edmunds later this month when he starts work at the Petrus wine bar.

Oli, who came third in last year’s competition, and girlfriend Erin Summers, will start at the Whiting Street bar on February 27, providing food to accompany the wine.

“I’m excited. I have identified how the food should be. The original plan was to do an outrageous fine dining but we decided against that. We want something that is comfortable for everyone,” said Oli, 23.

He said Petrus will serve parfait, cheeses and bread to eat as snacks while food made ‘from good produce’ will be served in a small dining area.

The move came about after the owners of the London restaurant where Oli worked decided to change the food and the chefs it employed.

Oli was visiting his mum who lives near Bury and she introduced him to Ryan Smith, who opened Petrus in November and who was looking to start serving food and snacks.

Ryan said customers had been asking when he was going to start serving food.

“It was always part of my plan but it was difficult to do everything at once so working with Oli and Erin is great.”

From February 27, Petrus will start serving lunches from 12pm to 2.30pm and main meals/ snacks from 5pm.
